BEEF BIRRIA SLIDERS
Beef Birria Sliders: small in size, HUGE in flavor.Bringing the authentic flavors of birria to slider form!Inspired by traditional birria, these sliders take all those incredible flavors and make them perfect for sharing (or not!). Beef Birria Sliders are it. Tender shredded beef, that amazing birria sauce, melty cheese, and fresh toppings all come together in the perfect bite This recipe takes a little time, but the reward is absolutely worth it.

- In a heavy-bottomed skillet or Dutch oven, melt unsalted butter and add olive oil. Heat over medium heat.

- Cut the beef or lamb into large chunks if necessary for easier handling. In batches, sear the meat pieces for 2-3 minutes on each side until they develop a nice brown crust. Avoid overcrowding the pan to ensure even browning.

- Once seared, remove the meat from the skillet and set it aside on a plate.

- In the same pot, add the quartered onions, whole garlic cloves, and the quartered tomatoes.

- Remove stems and seeds from the dried Arbol, Guindillas, and Ancho chilies.Add the dried chilies (Arbol, Guindillas, and Ancho).

- Stir in brown sugar, tomato paste, salt, and black pepper.

- Pour in hot boiling water. Stir the mixture to combine all the ingredients well.

- Cover the pot with a lid and let it cook for about 10-15 minutes on low heat, allowing the vegetables to soften and develop their flavors.

- After cooking, carefully transfer the softened vegetable mixture (including the chilies) to a blender. Blend until smooth. Take care when blending hot ingredients to avoid splatters; you may want to allow it to cool slightly before blending.

- Return the seared meat to the pot. Pour in the blended sauce, along with beef broth. Add bay leaves and sprigs of rosemary.

- Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the meat is fully tender and easily shreds with a fork. Stir occasionally to prevent sticking and ensure even cooking.

- Once the meat is tender, remove it from the pot and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.

- Return the shredded meat to the pot and mix it with about 1 cup of broth to keep it moist and flavorful.

- Preheat your oven to 350°F (175°C).

- Place the bottom halves of the burger buns on a roasting tray.

- Spoon a generous portion of the shredded beef onto each bottom bun.

- Add a few slices of onion and sprinkle with chopped coriander over the meat.

- Place a slice of mozzarella cheese and a slice of Emmental cheese on top of each slider.

- Place the top halves of the burger buns onto each slider.

- In a small bowl, melt 2 tablespoons of butter and mix in 1 tablespoon of chopped coriander.

- Using a pastry brush, brush the butter mixture generously over the tops of the slider buns.

- Cover the tray with foil and place it in the preheated oven. Bake for about 15-20 minutes, or until the cheese is melted and the buns are lightly toasted.

- Remove the sliders from the oven and let them cool slightly. Serve hot and enjoy your delicious Beef Birria Sliders!
