Prepare the Chickpeas

  • Rinse 2 cups of chickpeas thoroughly under running water.
  • In a large bowl, soak the chickpeas overnight in ample water with a pinch of baking soda.
  • After soaking, drain the water from the chickpeas.
  • Place the chickpeas in a pressure cooker and add enough water to cover them.
  • Add 1 teaspoon of salt.
  • Close the pressure cooker lid and cook on high heat for about 12 minutes or until the chickpeas are soft and tender.
  • Once cooked, release the pressure and drain the chickpeas. Set them aside.

Prepare the Spiced Chickpeas

  • In a large pan, heat 2 tablespoons of oil over medium heat.
  • Add 1 tablespoon of ginger garlic paste and sauté until fragrant (about 1-2 minutes).
  • Add 1 teaspoon of cumin seeds and let them sizzle for a few seconds.
  • Stir in salt to taste (approximately 1/2 teaspoon), 1/2 teaspoon of coriander powder, 1/4 teaspoon of garam masala, and 1/2 teaspoon of chili powder.
  • Pour in 1/4 cup of water and mix well. Cook this mixture for a few minutes until the spices are well combined and aromatic.
  • Add the boiled chickpeas to the pan and stir to coat them in the spice mixture. Cook for another 7-8 minutes, allowing the flavors to meld together.
  • Turn off the heat and let it sit for about 10 minutes to cool slightly.

Assemble the Chaat

  • In a large mixing bowl, combine the spiced chickpeas, 1 1/2 cups of cubed boiled potatoes, 1 cup of chopped tomatoes, and 1 cup of diced onions.
  • Add 1/4 cup of tamarind sauce, a handful of chopped fresh coriander leaves, and 2 tablespoons of lemon juice. Adjust the lemon juice and tamarind sauce according to your taste preferences.
  • Mix everything gently but thoroughly to ensure the ingredients are well combined.

Serve

  • Transfer the chaat to a serving dish or individual bowls.
  • Optionally, garnish with additional chopped coriander or sev (crispy chickpea noodles) for added texture.
