1. In a large mixing bowl, combine yogurt, crushed ginger, crushed garlic, and finely chopped green chilies. Stir the mixture until it is well combined.

2. Add salt, Kashmiri red chili powder, regular chili powder, garam masala powder, coriander powder, cumin powder, turmeric powder, carom seeds, dried fenugreek leaves, mustard oil, and lemon juice to the bowl. Mix well to create a smooth and consistent marinade.

3. Cut the chicken thighs into bite-sized pieces, ensuring they are uniform in size for even cooking.

4. Add the chicken pieces to the marinade, making sure to coat each piece thoroughly. Use your hands or a spatula to ensure all surfaces of the chicken are covered with the marinade.

5. Cover the bowl with plastic wrap or a lid, and place it in the refrigerator. Allow the chicken to marinate for 3 to 4 hours, or ideally overnight. This will help the flavors penetrate the meat and make it tender.
