Preheat your oven to 325°F (160 C). In a medium bowl, combine the biscuits crumbs and melted butter. Press the mixture into the bottom of 4 cups of 180 ml each to form the crust. Bake in preheated oven at 180 c for 8 minutes. Take out and set aside.

In a large mixing bowl, beat the cream cheese to make it smooth, add , granulated sugar, flour and vanilla extract & mix until smooth and creamy. Add the eggs one at a time, beating well after each addition. Gradually add the heavy cream and keep mixing until well combined.

Pour the cheesecake filling over the crust in the prepared cups. Smooth the top with a flat side of spoon.

Place on a baking sheet and bake in the preheated oven for about 35 minutes, or until the center is set and the edges are lightly golden. Remove from the oven and let cool for about 3-4 hours.

Or use water bath method for smooth and flatten top of cheesecake. Pour very hot water into the baking dish until it fills the dish by about a third. Carefully place the filled cups in the dish.Bake for 30 to 40 minutes or until edges are set but the center wobbles slightly. Remove from the oven and let cool completely.

When ready to serve, sprinkle 1 and 1/2 teaspoons of sugar over the top of each chilled cheesecake . Using a blow torch, caramelize the sugar until dark amber and bubbling.
