DHABA STYLE CHANNA DAAL
The Dhaba Style Channa Dal Fry, a delicious and flavorful dish made with split chickpeas, is served at both restaurants and roadside dhabas.I am striving to recreate the recipe as it is served, which involves boiling the daal separately and then making a rich gravy with aromatic spices.

Step 1

Begin by soaking the daal in water for 1 hour. Rinse the daal thoroughly under running tap water until the water runs clear.

In a pot, bring water to a boil and add the soaked daal. Boil the daal on medium heat until it is slightly tender. It should be about 80% cooked, as the remaining 20% will be cooked during the frying process.

Heat ghee in a pan.Add onions to the pan and cook them until they become translucent.

Crush ginger and garlic, and add them to the pan. Fry until they turn slightly brown.

Add tomatoes to the pan and cook until they become softened.

Now, add the spices: red chili powder, crushed chillies, coriander powder, cumin powder, salt, turmeric, and chicken powder. Cook until the oil separates.

Mix in the tamarind paste thoroughly.

Add the boiled daal to the pan and cook on high heat for 2-3 minutes.

Add water if necessary and continue cooking for another 6-7 minutes until the oil separates.

Once daal is ready. Turn off the heat and sprinkle garam masala over the daal.
