Instructions

Salmon:

  1. 1- In a small bowl, whisk together lemon juice, olive oil, minced garlic, dried thyme, oregano, smoked paprika, and black pepper.
  2. 2- Line a large baking sheet with foil. Brush the foil lightly with olive oil.
  3. 3- Season both sides of the salmon fillet generously with salt.
  4. 4- Place the salmon on the prepared foil. Pour the marinade over the salmon and top with lemon rings and rosemary sprigs. Seal the foil tightly to create a packet.
  5. 5- Preheat oven to 185°C (365°F).Bake the salmon packet for 20 minutes.
  6. 6- Carefully remove the salmon from the oven and open the foil packet.
  7. 7- Broil the salmon for an additional 4 minutes to crisp the skin.

Prepare the Potatoes and Asparagus:

  1. 1- In a pot , boil the water, add baby potatoes , and season with chicken powder generously .
  2. 2- Boil the baby potatoes in water until tender. Drain and set aside.
  3. 3- In a bowl, combine the boiled potatoes with dried parsley, garlic granules, and olive oil. Toss to coat.
  4. 4- Toss the asparagus with olive oil, garlic granules, and salt.
  5. 5- Preheat oven to 200°C (390°F).
  6. 6- Add the seasoned potatoes and asparagus to a baking sheet.
  7. 7- Roast for 15 minutes, or until potatoes are golden brown and asparagus is tender-crisp.

Serve;

  1. Arrange the cooked salmon, roasted potatoes, and asparagus on a platter. Garnish with additional fresh rosemary and lemon wedges if desired. Serve immediately.
