Gulab Jamun;
  • 600 grams khoya (mawa)
  • 120 grams plain flour
  • 2 tsp baking powder
  • 55 g Egg (1) (1)
  • or use room temperature milk same quantity
  • Sugar Syrup;
  • 6 cups Sugar
  • 6 cups Water
  • 2 tsp Rose water
  • 3 strands Saffron
  • ¼ tsp cardamom powder
  • oil for frying
Instructions
    Prepare the Dough;
  1. - Take a large tray and add the Khoya. Use your hands to break the Khoya into smaller pieces. Begin kneading it thoroughly to ensure there are no grains left. You want to achieve a smooth and creamy texture, which is key for soft Gulab Jamun.
  2. - Once the Khoya is smooth, add in the baking powder and the egg (or room temperature milk if you prefer). Continue kneading the mixture until all ingredients are well incorporated and the dough is smooth.
  3. - Start adding the plain flour in batches. It’s important to add the flour gradually and not all at once. Mix well after each addition. You should aim for a soft dough that is not sticking to your hands or the bowl.
  4. - Once the dough is ready, divide it into small, relatively equal-sized balls. Aim for around 14 grams for each ball to ensure even cooking.
  5. - Take each piece of dough and roll it between your palms to form a smooth ball. Make sure there are no cracks on the surface of the Gulab Jamun, as cracks can cause them to break during frying.
  6. - Place the rolled balls on a tray and cover them with a damp cloth. This prevents them from drying out and becoming hard while you prepare to fry.
  7. - In a deep frying pan or kadai, heat oil to about 150°C (302°F). It’s important to maintain the correct temperature to ensure the Gulab Jamun cook evenly and do not absorb too much oil.
  8. - Carefully add the dough balls one by one into the hot oil, placing them around the edges of the pan to avoid splashing. Fry them in batches to avoid overcrowding, which can lower the oil temperature.
  9. - Using a slotted spoon, gently stir the Gulab Jamun in the oil. This helps them cook evenly and develop a uniform golden-brown color.
  10. Prepare the Sugar Syrup;
  11. - In a large pot, combine sugar and water. Stir the mixture continuously until the sugar dissolves completely. Bring it to a boil, then turn off the flame.
  12. - Once the syrup is off the heat, add the saffron strands, rose water, and cardamom powder. Stir well and allow the syrup to cool down to lukewarm before adding the fried Gulab Jamun.
  13. Final Preparation;
  14. - Once the Gulab Jamun are a nice golden brown, immediately remove them from the oil and drop them into warm sugar syrup. Let them soak in the syrup for about 5-6 hours to allow them to absorb the sweetness. After soaking, refrigerate them for a refreshing treat or enjoy it warm , slight warm the pot of sugar syrup and gulab jamun slightly.
  15. - Once the Gulab Jamun are soaked in syrup, they are ready to be served. Enjoy these delicious, syrupy treats as a festive dessert or a sweet indulgence any time!
