MALAI KULFI
Malai Kulfi is a classic dessert that’s rich, creamy, and perfectly sweet. To make recipe, milk is simmer until it reduces to less than half of quantity like thick consistency, flavoured with cardamoms, saffron, and nuts and make it more creamy with khoya.

Take any heavy bottom pan. Pour milk into it.

Bring to boil , stir occasionally. Then reduce the heat to low. Let the milk simmer until reduces around 1/2 litres of milk.

Add cardamom pods. Again once reduces around 1 litres of milk from 3 litres add condensed milk.

Take 2 tbsp from this warm rabri milk and add saffron strands. Pour saffron milk in rabri.

When half of milk reduces, combine 1/4 cup of cold milk with cornflour and powdered milk. Pour into rabri and stir continuously.

At this point, once 1 litres of milk remaining, scrapes the side of pot and mix in rabri.

Turn off the heat and add chopped nuts. I used almonds and pistachios.

Add Khoya and mix well.

The kulfi mixture is ready to set. Let it cool for 10 minutes.

Pour the kulfi mixture into kulfi moulds and freeze for 2 hours.

Take out and add pistachios / almonds on top. Freeze again for 8 hours.

Place kulfi mould in water 15 seconds and take out kulfi easily.Finally, garnish the malai kulfi with few chopped nuts , dried rose and enjoy.
