Start by preparing the chicken mixture, In a food processor, combine the boneless, skinless chicken thighs with salt, white pepper, garlic powder, onion powder, mustard powder, chicken bouillon, and paprika. Pulse the mixture until it is well combined and sticks together. Be careful not to over-process the chicken.
  2. 2. Divide the chicken mixture into equal parts and shape them into patties. You can use a patty presser for uniform patties. Adjust the thickness of the patties according to your preference, but keep in mind that frying time will vary. Place the shaped patties on a tray lined with parchment paper and chill them in the freezer for about an hour to firm up.
  3. 3.In a frying pan, add a little oil and heat it over medium heat. Add the panko breadcrumbs to the pan.Toast the panko breadcrumbs, stirring frequently, until they turn golden brown and become fragrant. This should take about 3-5 minutes. Be careful not to burn them.Once the panko breadcrumbs are toasted, transfer them to a plate and let them cool completely.
  4. 4. Set up a breading station with plain flour in one bowl, beaten eggs in another bowl, and toasted panko breadcrumbs in a third bowl.
