  • 500 g boneless skinless chicken thighs
  • 1 tablespoon salt
  • 1 teaspoon ground white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon mustard powder
  • 1 teaspoon paprika
  • 1 tablespoon chicken bouillon
  • 1 liter vegetable oil for frying
  • 1 & 1 1/2 cups panko roasted breadcrumbs
  • 1 cup plain flour
  • 2 large eggs
  • For Serving
  • 4 burger buns
  • Mayonnaise
  • 1 cup shredded iceberg lettuce
Instructions
  1. 1. Start by preparing the chicken mixture, In a food processor, combine the boneless, skinless chicken thighs with salt, white pepper, garlic powder, onion powder, mustard powder, chicken bouillon, and paprika. Pulse the mixture until it is well combined and sticks together. Be careful not to over-process the chicken.
  2. 2. Divide the chicken mixture into equal parts and shape them into patties. You can use a patty presser for uniform patties. Adjust the thickness of the patties according to your preference, but keep in mind that frying time will vary. Place the shaped patties on a tray lined with parchment paper and chill them in the freezer for about an hour to firm up.
  3. 3.In a frying pan, add a little oil and heat it over medium heat. Add the panko breadcrumbs to the pan.Toast the panko breadcrumbs, stirring frequently, until they turn golden brown and become fragrant. This should take about 3-5 minutes. Be careful not to burn them.Once the panko breadcrumbs are toasted, transfer them to a plate and let them cool completely.
  4. 4. Set up a breading station with plain flour in one bowl, beaten eggs in another bowl, and toasted panko breadcrumbs in a third bowl.
  5. 5. Coat each chilled patty in flour, shaking off any excess. Dip the coated patty in the beaten egg, ensuring it is fully coated. Then coat the patty well in the panko breadcrumbs.
  6. 6. Fry the coated patties in the hot oil until they are golden brown and cooked through. Alternatively, you can air fry or bake the patties in the oven for a healthier option. Once cooked, transfer the patties to a wire rack to drain any excess oil.
  7. Heat vegetable oil in a wok over medium heat until it reaches around 170 degrees Celsius, suitable for frying.
  8. 7. Prepare the mayo-mustard sauce, Mix some mayonnaise with mustard powder or English mustard to create a flavorful sauce for the burger.
  9. 8. Assemble the McChicken Burgers, Butter and toast the burger buns for added flavor and texture.
  10. 9. Shred the iceberg lettuce for the burger topping.
  11. 10. To assemble the burgers, place a cooked chicken patty on the bottom bun, top it with shredded lettuce, and drizzle with the mayo-mustard sauce. Close the burger with the top bun.
  12. 11. Serve the McChicken Burgers hot and fresh, and savor the delicious combination of crispy chicken, creamy sauce, and fresh lettuce. Enjoy your homemade version of this classic fast food favorite!

Note

Air Fryer Option:

1. Preheat your air fryer to 180 degrees Celsius (350 degrees Fahrenheit).
2. Once the air fryer is preheated, place the coated chicken patties in the air fryer basket in a single layer, making sure they are not touching and spray with cooking oil.
3. Cook the patties in the air fryer for about 10-12 minutes, flipping them halfway through the cooking time to ensure even browning.
4. Check for doneness by inserting a meat thermometer into the thickest part of the patty. It should register at least 75 degrees Celsius (165 degrees Fahrenheit).
5. Once the patties are cooked through and golden brown, remove them from the air fryer and let them rest for a few minutes before assembling the burgers.

Oven Option:
1. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
2. Place the coated chicken patties on a baking sheet lined with parchment paper, ensuring they are not crowded.
3. Bake the patties in the preheated oven for about 20-25 minutes, flipping them halfway through the cooking time for even browning.
4. Use a meat thermometer to check for doneness, aiming for an internal temperature of at least 75 degrees Celsius (165 degrees Fahrenheit).
5. Once the patties are cooked through and crisp on the outside, remove them from the oven and allow them to rest for a few minutes before assembling the burgers.

Frying Details:
- When frying the chicken patties in oil on the stovetop, make sure the oil is hot but not smoking. Maintain a consistent temperature throughout the frying process to ensure even cooking and a crispy exterior.
- It's essential to fry the patties in batches, allowing enough space between them in the pan to prevent overcrowding and promote proper browning.
- Monitor the frying process closely and adjust the heat as needed to prevent the patties from burning on the outside while remaining raw inside.
- Once the patties are golden brown and cooked through, transfer them to a wire rack to drain excess oil and help retain their crispiness.
