Prepare the Filling:

  1. - In a large skillet over medium heat, add 2 tablespoons of butter and allow it to melt completely.
  2. - Add the diced onion to the pan. Sauté for about 3-4 minutes, or until the onion becomes translucent.
  3. - Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  4. - Add the cubed chicken breast to the skillet. Season with 1½ teaspoons of salt, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, and 1 teaspoon of oregano. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink and has changed color.

  5. - In a blender, combine the canned tomatoes and chipotle peppers in adobo sauce. Blend until smooth to create a paste.
  6. - Pour the tomato-chipotle mixture into the skillet with the cooked chicken. Stir well to combine.
  7. - Add the diced green bell pepper, red bell pepper, chopped broccoli, and sweet corn to the skillet. Cook for an additional 5-7 minutes, or until the chicken is tender and the vegetables are slightly softened. Ensure all the water evaporates so the filling is not too watery.
  8. - Once fully cooked, turn off the heat and let the filling cool completely.

Assemble & Bake the Patties:

  1. - Preheat your oven to 180°C (350°F).
  2. - Take one square of puff pastry and place it on a clean, flat surface. Spoon a generous amount of the cooled chicken filling into the center of the pastry square, leaving about 1 cm of edge space.
  3. - Place another square of puff pastry over the filling. Press the edges firmly to seal. You can use a fork to crimp the edges for a decorative touch.
  4. - If desired, take a third square of puff pastry, and use a lattice roller (or a knife) to cut it into strips. Lay the strips over the top of the sealed patties and trim any excess pastry. Press the edges down to seal.
  5. - Brush the top of the patties with the beaten egg to give them a golden - In a small bowl, combine the golden breadcrumbs and grated Parmesan cheese. Sprinkle this mixture generously over the top of the patties.
  6. - Place the assembled patties on a baking sheet lined with parchment paper.
  7. - Bake in the preheated oven for about 35 minutes, or until the tops are golden brown and crispy.

      I recommend using Armaan puff pastry squares. They come in various sizes, including 4-inch squares, rolled pastry sheets, and 5-inch squares. I used 4-inches one. Armaan puff pastry is halal and can be found at your local desi grocery store, such as Quality Foods.
