Ingredients
Boiling the Rice:
1kg Rice
7 Cloves
7Green Cardamoms
3slices of Lemon
Water for boiling
Layering:
850g Granulated Sugar
1cup Ghee
1cup Milk
1/2cup Tutti Frutti
Yellow, Red, and Green food coloring
1/2kg Chum Chum
Frying Nuts:
1/4cup Ghee
1/2cup Almonds
1/2cup Raisins
1/2cup Coconut flakes
1/2cup Pistachios
1/2cup Cashews
Instructions
Step 1
In a large pot, add green cardamoms, cloves, lemon slices, and water. Bring the mixture to a boil.
Step 2
Add the washed and soaked rice to the pot and cook until the rice is fully cooked.
Step 3
In a separate pan, heat 1/4 cup of ghee. Add pistachios, cashews, coconut flakes, raisins, and blanched almonds to the pan. Fry the nuts for 2-3 minutes until they are lightly browned. Set aside.
Step 4
In a large pot, combine ghee, granulated sugar, milk, and water. Cook the mixture over medium heat until the sugar is completely dissolved.
Step 5
Add the boiled rice to the sugar mixture in the pot. Add half of the fried nuts and half of the khoya to the pot. Cook the mixture until the water is almost dried up.
Step 6
Drizzle the food colouring over the rice mixture. Add tutti frutti, remaining khoya, and fried nuts on top of the rice.
Step 7
Cover the pot and steam the mixture for 20 minutes over medium flame.
Step 8
Remove the lid from the pot and gently mix the contents. Serve the Mutanjan hot.
Step 9
Add pieces of chum chum to the Mutanjan before serving. Enjoy your delicious Mutanjan!
