A traditional dish that brings together tender pieces of mutton infused with a symphony of spices and aromatic ingredients. Cooked slowly in a terracotta pot, this one-pot wonder features a blend of ground spices, whole spices, and layers of flavor from ginger, garlic, and fresh tomatoes. The mustard oil enhances the richness, while the creamy yogurt adds depth and tang. Perfectly simmered until the mutton is melt-in-your-mouth tender, this dish is best enjoyed with fluffy rice, soft chapatis, or warm naan. Gather your loved ones and enjoy a meal that not only satisfies the palate but also creates cherished memories around the dining table.

Ingredients
  • 1.5 kgs Mutton or lamb
  • 150 ml Mustard oil
  • 1 ½ tsp Salt
  • 1 ½ tsp Coriander powder
  • 1 ½ tsp Cumin powder
  • 1 tsp Garam masala
  • ½ tsp Turmeric
  • 1 tsp Crushed chillies
  • 1 tsp Chilli powder
  • 1 tsp Kashmiri chilli powder
  • 5 pieces Green cardamom pods
  • 3 pcs Bay leaves
  • 3 inches Cinnamon stick
  • 3 pieces Black cardamom
  • 1 tsp Black peppercorns
  • 1 tsp Cloves
  • 1 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • ½ cup Yogurt
  • 3 large Tomatoes
  • 400 g Onions
  • 2 tbsp Fresh coriander
  • 4 Green chillies
Instructions
  1. - Place the terracotta pot on the stovetop and turn on the heat to medium. Allow the pot to warm up for a few minutes. This step ensures even cooking of the mutton.
  2. - Carefully pour in the mustard oil into the preheated pot. Allow the oil to heat up until it shimmers. This indicates that the oil is hot enough for cooking.
  3. - Once the oil is hot, add the whole spices into the pot. This should include green cardamom pods, bay leaves, a cinnamon stick, black cardamom, black peppercorns, and cloves. Stir and fry until hear crackling sound and become fragrant.
  4. - Next , add the mutton pieces with bones to the pot. Ensure that the mutton is evenly distributed in the pot for optimal cooking.
  5. - Immediately add all the ground spices to the pot. This includes salt, coriander powder, cumin powder, garam masala, crushed red chillies, turmeric, chilli powder, and Kashmiri chilli powder. Stir well to coat the mutton evenly with the spices.
  6. - Add the ginger paste and garlic paste to the mixture. Then, slice the green chillies and add them in as well. Following this, incorporate the yogurt, sliced tomatoes, and sliced onions into the pot. Stir everything together to combine the ingredients well.
  7. - Once all the ingredients are in the pot, cover it with a lid. Reduce the heat to medium-low and let it cook for about an hour. Make sure to stir the mixture every 15 to 20 minutes to prevent sticking and ensure even cooking.
  8. - After 30 minutes of cooking, remove the lid and give the mixture a thorough stir. This will help to combine all the ingredients and flavors. Replace the lid and continue cooking.
  9. - As you approach the one-hour mark, check the mutton for tenderness. The meat should be soft and easily pulled apart. If the water has reduced significantly and the meat is tender, you can turn off the heat.
  10. - Once cooked, remove the pot from the heat. Your Mutton Makta is now ready to serve. It pairs beautifully with rice, chapatis, or naan. Garnish with fresh coriander before serving if desired.
