  • 1 1/4 kgs mutton/lamb
  • 1/4 cup mustard oil
  • 4 bay leaves
  • 3 inches cinnamon stick
  • 4 cloves
  • 3 black cardamoms
  • 4 green cardamoms
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon Kashmiri chilli powder
  • Salt to taste
  • 2 tablespoons ginger garlic paste
  • 3 tablespoons tomato paste
  • Water (as needed)
  • 1/2 cup yogurt
  • Fresh coriander leaves (for garnish)
  • Green chillies (for garnish)
Instructions
  1. - Begin by adding mustard oil to a large pan or heavy-bottomed pot. Heat the oil over medium-high heat until it’s hot and begins to shimmer.
  2. - Once the oil is hot, carefully add bay leaves, a cinnamon stick, cloves, black cardamoms, and green cardamoms. Allow the spices to splatter and release their aroma in the oil, stirring occasionally to prevent burning.
  3. - Next, add the mutton or lamb pieces into the pan. Increase the heat to high and cook the meat, stirring frequently until it changes color and turns a rich brown. This step is essential for developing a deep flavor.
  4. - Once the meat is browned, sprinkle in coriander powder, turmeric, Kashmiri chilli powder, and salt. Stir everything together to coat the meat evenly with the spices. Allow this mixture to cook for 2-3 minutes, letting the spices infuse into the meat.
